The reason I say have at least 3 good keywords to optimize your site for is simple, three keywords give you much more writing material than just one and wouldn't you rather have traffic coming in from three keywords sources instead of just one?

Once you have written a lot of quality content for your site, you will want to focus on linking structure. Search engines love links, they examine both interior and exterior links to help them decide what is important to your visitors and how they can help web surfers find you easier. Quality links mean better ranking in the search engines.
Interior linking is very, very simple. All you need to do is find a quality phrase or keyword on one page that easily relates to another page you have on your site and link the phrase with the URL of the other page. This creates a text link allowing visitors to move around your site much easier.
